Falafel Pita Pockets – A vegetarian meal in a pocket.
Looking for a vegetarian meal that is quick and easy to make? It is good for the non-vegetarian amongst us (that would be me) to have meat free food at least once a week and this one won’t take you long to make as you can just buy the falafels and heat them up.
Of course you can make the falafels yourself. I recommend this recipe from Nagi, at Recipe Tin Eats. Hers are delicious, but you need to have time to make them. This is my quick and tasty version for busy nights or “I can’t be bothered” nights.
Falafels are generally made with chickpeas. If you haven’t seen my blog post on legumes yet, this would be a great time to jump over and see what the fuss is about. Chickpeas are a legume and full of fibre to help with a healthy gut. A healthy gut can contribute to good moods as well as many other health benefits.
Another benefit of legumes is that the fibre can help us feel satisfied for longer and it makes our body work harder to digest it which contributes to increasing our metabolism.
You could also make these in a wrap if you don’t have the pita pockets. Remember to opt for the wholemeal or multigrain version of these to again focus on fibre. The flavour is not that much different.
Pile these up with salad of your choice. If you go with the sauerkraut, well first of all, good choice 😀, you will be adding some good bacteria for the pre-biotic fibres to feed on. A nice Mediterranean style salad is also a great choice. It is full of flavour and goes very nicely with these falafels. I would use the one from my Souvlaki recipe.
Let me know if you try this and any changes that you made. Happy cooking!
