Ginger Chicken Burgers with Lime Yogurt Dressing

Say goodbye to boring burgers! These Ginger Chicken Burgers with Lime Yogurt Dressing are a flavourful twist on a classic favourite. I didn’t create this recipe from my own amazing culinary expertise (cough, cough), but I did adapt it from a recipe I was shown by a friend who found it at the Taste.com.au website. So, credit to my friend and to Taste.com.au.

I always like to take a recipe, and if it needs it, make it a bit healthier, as I love food and don’t want to miss out on all the yumminess available. But I am also keenly aware of the benefits of healthy food on my body and mind and for those that I try to help.

If you go to the original recipe you will notice that it was created as mini-burgers or what we now commonly know as “sliders”. Well, this is great for parties but I would need to make many of these to feed a family. So why not take the basic recipe and make it into a full sized burger? And put it on a low GI bread roll with more salad? The final touch is to swap the mayo for Greek yoghurt and boost the health benefits again with good bacteria and calcium and protein.

It is really quite easy to make if you start with chicken or turkey mince. As a bit of a side note, turkey breast mince is way less fatty than the regular turkey mince from Woolworths. Below is a rundown on the different mince options and their kilojoule, proteins and fats. What I look for is the fat content per 100g of mince. The more fat that is in it the higher the kilojoules. You will also notice that saturated fat is the other major concern. This is related to the health implications, particularly for heart and mental well-being. Aiming for low saturated fats is ideal, so the lower the number, the better for your health. You might also notice that lowering the fat content increases the protein content. Protein helps us feel satisfied after a meal and is digested more slowly.

Serving Suggestions

There are many options for topping these burgers with delicious and healthy ingredients. Some of the options I like are:

  • Sliced cheese
  • Lettuce
  • Tomato
  • Red onion – pickling these would also be a nice addition.
  • Avocado
  • Pickled or fermented red cabbage
  • Tomato relish – my current favourite is from the Beerenberg Farms – Tomato and Eggplant Relish

Customise Your Burger!

  • Spicy Kick: If you like more zing to your burger, add some chilli flakes to the turkey or a few drops of Tabasco sauce in your yoghurt dressing.
  • Dairy Free: For dairy free options look for a calcium fortified yoghurt and cheese.
  • Herb swap: swap the herbs for parsley, basil or mint to create a new flavour profile.
  • Turkey gobbler: this is an easy swap to turkey breast mince or make your own mince by blending up some chicken or turkey breast.

I think you are going to love these burgers as a quick Summer time family meal. They are simple, healthy and delicious with many options to customise them. I would love to know what changes you made.

Method

  1. 1

Process the garlic and ginger in a food processor until finely chopped.

  2. 2

Wash and chop the spring onions into 5cm pieces, add to the processor with the coriander (or parsley) and chop to your desired consistency.

  3. 3

Add the curry powder and chicken mince to the processor and mix until well combined (or combine everything by hand in a bowl).

  4. 4

Shape the mixture into patties slightly larger than your burger buns, to allow for shrinkage as they cook.

  5. 5

Prepare the cheese, tomato and rocket on a serving plate, ready for assembling.

  6. 6

Slice the bread rolls in half.

  7. 7

Cook the patties on the BBQ or in a frying pan for approximately 4–5 minutes per side, depending on thickness and heat.

  8. 8

Lightly toast the cut sides of the bread rolls on the grill or in the pan.

  9. 9

Mix the Greek yoghurt with the lime zest and juice to make the dressing.

  10. 10

Assemble the burgers: layer cheese, tomato, patty, yoghurt dressing and rocket between the toasted buns.

Michelle’s note: Freeze ginger in 5cm pieces and grate it straight from frozen (skin and all) for next time. Multigrain rolls keep the fibre up and the GI down. Want more kick? Add chilli flakes to the mince or a dash of Tabasco to the dressing. Dairy-free works too, using a calcium-fortified yoghurt alternative and dairy-free cheese. Watching your sodium, for example with blood pressure in mind? Swap the cheese for mozzarella, which runs about 25% lower in sodium than cheddar (roughly 520mg vs 690mg per 100g), or ricotta, which is lower again at around 170mg per 100g, though its soft texture suits a dollop more than a slice.
